Our jerky is handmade in small batches at our butcher shop in Howe, Texas, the same way we've done it since 1963. Because it isn't loaded with the extra preservatives you find in mass-produced jerky, it needs a little care to stay at its best. Here's how to store it.
Before you open the bag
Keep sealed bags in a cool, dry spot out of direct sunlight, like a pantry or cupboard. Heat and light are what make jerky lose its flavor fastest, so don't leave it on a dashboard or in a hot truck.
After you open the bag
Refrigerate it. Once a bag is open, air gets in, so put it in the fridge. Press out as much air as you can and reseal the bag, or move the jerky into an airtight container or zip-top bag.
Stocking up? Use the freezer
We recommend freezing jerky within three weeks of purchase if you won't eat it by then. Jerky freezes well, so it's a great way to stock up during a sale or keep a supply on hand for hunting season. For best results:
- Freeze it in its original sealed bag, or in a freezer bag with the air pressed out.
- Write the date on the bag.
- Thaw it in the fridge, and it's ready to eat.
How to tell if jerky has gone bad
Toss any jerky that smells off, feels slimy or sticky, or shows any mold. When in doubt, throw it out.
